When buying a set of cookware, a person will almost always consider the make of the items he is about to get. The materials used are a big factor that affects the durability of the item. Hammersmith Corporation is the last surviving solid copper cookware maker in the United States. The owner, Jeffrey Herkes, proudly emphasized that they only have a total of 12 employees making these serving and cookware pieces, with either silver or tin linings. They get their supply of C11000 or copper from Revere Copper Products, Inc. For professional cookware, the copper material they use ranges from .090 up to .125 inches thick. Its interiors are made from stainless steel. Its handles are from sturdy cast iron material. Ruffoni Italian Copper Cookware is used to cook pastries. It features exceptional conductivity, and distributes heat evenly.

Although it might be difficult to find, Hammersmith perpetuates kitchen items made of copper. If you must, buy one copper kitchen utensil and compare it with your existing items in the kitchen. After all, side by side comparison is one of the best ways to see which one is really better. The only imaginable setback with copper is its high tendency to rust and corrode. When this happens, it can contaminate food and might cause illnesses. But this is easily counteracted by lining it with stainless steel. This way, the cookware maintains the pleasant characteristics of copper even if it is not seen.

Induction Range Cookware

I started out with an idea about redecorating my kitchen. It seemed simple enough. The whole idea snowballed into what kind of pots and pans I was going to buy to work with my new induction range. I became aware after many hours of reading about induction ranges that you need to upgrade your stove ware to induction range cookware so it works in unison with the stove top. Induction ranges are a two-part system, who knew? You have, part one the range, then part two the cookware.

The main idea behind induction range cookware is that it has to be magnetized. Stainless steel has iron throughout the metal but it is not automatically magnetized. So, that leaves us with the question, what cookware sets, are induction ready?

Other countries are already involved in heavy use of induction pots and pans, especially Europe. More companies in the United States have been putting induction sets into their cookware line. Let's talk a minute about the purpose of an induction stove, so you can understand why you need an induction cookware set. Induction ranges do not use flammable energy sources. They use a magnetic field to form a heat source. That's why many professional kitchens use this type of technology for its efficiency. The range top itself is made from copper wire coiled into circle plates, burners, when you turn on the burner an electric current is sent creating a magnetic field which heats the pot on the burner. If you don't have a magnetized pot you don't get even heat created to cook your food. Aluminum pots get too much heat, stainless steel pots not enough heat.

The benefits of cooking this way are many. One is environmental, using less fossil fuels, creating a targeted heat source which is clean and extremely efficient, the air doesn't even get hot around the pot just your cookware gets heated. The second is less hazards for people no heat is created until you put a pot on top of the burner. You cannot create heat without metal and magnetization and the results are fewer burns for chefs and cooks.

As I said before, you are going to see more companies with induction ready cookware but my personal favorite, which I use, is All-Clad induction cookware. If in doubt, about the readiness of your cookware, take a magnet and put it towards the base of your pot. If it sticks you are good to go. If not, then you better look into getting different cookware for induction cook tops.

When starting to redo your kitchen be aware that little details can snowball into tedious issues and that induction ranges need induction range cookware, part one and part two.

What Is Tri Ply Cookware?

Tri Ply displays one of the worlds most popular and functional cookware concepts. Tri Ply is basically two or three different metals that are laminated or bonded together to obtain the advantages of the two metals in one piece of cookware.

The metals most often used to create this high quality cookware are stainless steel, aluminum and copper. This type of cookware is often more expensive but is very durable and conducts heat faster and more evenly. The two main types are with just a base or disc inserted in the bottom and on your top quality cookware the inside layer goes up the side as well as at the base.

The most popular type of tri ply is stainless steel with aluminum. This type has an aluminum core sandwiched between two layers of stainless steel. The construction of this type of cookware starts in the raw material stage, with sheets and blanks. It is great for all types of cooking and most brands can go from the stove top to the oven.

One thing to keep in mind when buying this type of cookware is that you can get the same high quality product without having to spend your life savings. There are quality cookware companies out there that can give you the same great product, made with the same materials as the top brands. Just be sure that you read up on the materials used and how it is made. The big companies know they are popular and will charge you more for their name so be careful.

Another type of tri ply cookware is made with copper, aluminum and stainless steel. It starts the same way as the stainless steel/aluminum kind but has copper laminated on the outside instead of stainless steel. It has three layers with copper on the outside, aluminum in the middle and a stainless steel interior. Copper is used for it's conductivity as well as the aluminum since stainless steel alone is not a good conductor of heat. The process of making this type of cookware is also expensive, a little more so than the stainless steel and aluminum type. It is better for the stove top because of the insulation properties of the copper. Copper does react with food and will discolor it and can even be toxic with some foods which is why most copper cookware is lined with tin, nickel or stainless steel. Despite this fact it is still a top quality product. Having copper cookware will also make a statement in your kitchen with it's classy look and mirrored finish.

As with all cookware products, as stated earlier, you want to do a little homework. Sometimes the big name brands are not the best buy for the money. You can look at what they offer for the price and compare. With a little knowledge you will most likely find a quality cookware set for about 30 to 50 percent cheaper than the big guys without compromising on quality.

Pork Roast - How to Cook it Moist and Tender

Would you like to cook a pork roast that will make your mother-in-law turn green with envy? Follow these guidelines and you can put dried out and tasteless pork roast behind you forever!

Cooking pork roast is not rocket science. All it takes is heat and time and you'll wind up with cooked pork. However if you want to cook a pork roast that is moist, tender and delicious there are some guidelines to follow.

Cookware Set

The first step in the perfect pork roast formula is selecting the type of roast. Next on the agenda is determining the best cooking method for the roast you've selected.

This decision making process also works in reverse. If you know the cooking method you want to use you then decide on the cut of pork.

Probably the most important step in cooking today's pork is brining! This takes a little time planning to allow the roast to absorb the brine but it is well worth the effort.

Selecting the Roast

I'll have to admit that if I'm just hungry for pork roast my decision for the type of roast is whatever is on sale. Then I'll decide how to cook it based on what is best for that type.

If you don't want to use the "whatever is on sale method" then a little knowledge of pork roast is in order.

Most all pork roasts come from the shoulder and loin wholesale cuts. There are fresh ham roasts (the hind leg) but you will rarely see them in groceries. Also pork sirloin roasts are from the hind part of the loin and they fit the shoulder roast category.

Shoulder Pork Roasts

Roasts from the shoulder contain several different muscles along with connective tissue and a good amount of fat.

These roasts benefit from long slow roasting times that allow the connective tissue to break down. They are extremely flavorful due to the amount of fat.

Shoulder roast cuts include the whole shoulder, which is good for a crowd, Boston butt, the top of the shoulder and Picnic roasts from the bottom.

These roasts all might have different names in your grocery according to the cut.

Roasts from the shoulder are the cut of choice for recipes such as pulled pork.

Pork Loin Roasts

Roasts from the pork loin are the best roasts from the pig. They are single muscle roasts without much fat. These muscles are from the center of the back of the pig and get very little usage, which makes them tender.

Basically there are two main roasts from the loin. By far the most tender is the pork tenderloin. The mild pork flavor of the tenderloin lends itself to marinades to impart flavoring.

The pork loin roast has a slightly stronger pork flavor than the tenderloin and is extremely lean. It compares in leanness to chicken breast.

Brining Pork Roasts

Most all meat products will benefit from brining.

Brine is simply a solution of non-iodized salt and water. The meat has a less concentration of salt and water than the solution so Mother Nature takes over to equalize the two.

Basic brine is 1 cup of non-iodized salt to one gallon of water. But it doesn't stop there. All sorts of flavorings can be added to the brine and will be imparted to the roast.

A brined pork roast increases in weight because of the brining. The weight is all water. As the roast is cooked most of the water is cooked out but some remains resulting in a moist and tender roast.

The shoulder and sirloin roast will benefit from brining but they are just fine without it due to the fat content. For a pork loin roast, however, I consider brining essential because of its low fat content.

Cooking Pork Roast

Pork roasts are a little more forgiving when selecting a cooking method than their beef equivalent.

There are two basic methods for cooking meats. These two are the "moist heat" method and the "dry heat" method.

Moist heat simply means that there is a liquid included along with the roast in the cooking vessel.

The moist heat method is for cuts that are from the less tender sections of the animal. The moist heat assists in breaking down the fibers and tissue of the meat to yield a tenderer product.

Roasting in the oven, the crock-pot or even an electric skillet are ideal methods of applying heat to the roast during moist heat cooking. Either method should include a tight fitting heavy lid.

Pot roasts and braised roasts are examples of the moist heat cooking method.

The dry heat cooking method is the opposite of the moist heat method. No liquid is introduced during the cooking process.

Dry heat cooking should include a searing of some type for a crispy and flavorful exterior. You can sear the roast in a skillet or in an extremely hot oven for a short period of time.

Dry heat can be applied in the oven, on the grill or my favorite the smoker.

Pork Roast Cooking Times

Cooking time is critical for a moist and tender pork roast.

There are many variables to pork roast cooking times. Some of those variables include the type of roast, the size and thickness of the roast and the cooking temperature.

There are some rules of thumb for cooking time for the different roasts but at best they are only a guess.

A two to five pound pork loin roast cooked at 350 degrees f. will require roughly 20 to 30 minutes per pound.

Pork tenderloin in the one to two pound category will require the same 20 to 30 minutes per pound but at 425 degrees F. instead of 350 degrees.

A two to five pound Boston butt roast will require approximately 45 minutes per pound at 350 degrees F. The extra time is to allow the connective tissue to break down and the fat to melt and mingle with the roast.

The only sure way to know when your roast is done is to use a meat thermometer.

If you are roasting in the oven an oven thermometer is also recommended. Oven thermostats are notoriously inaccurate.

Like I said cooking pork roast is not rocket science. Following these guidelines, however, will yield a pork roast so moist and tender it will surely impress your guests and will definitely make your mother-in-law turn green with envy.

How to Make It:

Arrange graham cracker shells on a baking pan. Fill each shell with 1 scoop of ice cream then top with the crumbled cookies coating heavily. Freeze for 30 minutes to one hour, or until the ice cream has hardened. Press 2 M&M's into the front to look like red eyes, and press 8 strips of licorice into each ice cream scoop to form the spider's legs. Return to the freezer until serving time.

Chocolate Ghost Bites

You'll need:

2 pkg. (12 squares) white Chocolate 1/4 cup whipping cream 1 tablespoon of butter, softened Decorating gel

How to Make It:

Melt the chocolate squares, cream and butter in the microwave for 2 minutes, stirring after 1 minute. When the chocolate is completely melted, cover. Freeze until firm, about 1 hour or more. When chocolate is cool enough to handle, scoop with a spoon and roll chocolate mixture into bite-size spooky balls. Place the balls into a waxed paper and freeze for 20 minutes. Use a decorating gel to draw eyes on the frozen spooky balls to resemble ghosts. Refrigerate for 30 minutes to 1 hour. This will make your chocolate spookies firm upon serving.

You will be amused how kids will respond to the ideas. They will be thrilled at first to touch the scary chocolate bites yet at the end they will eat them all. You may wrap the squirmy chocolate cupcakes in decorative plastic wrap to give as giveaway. These ideas also go for adults!

Motivating our English as a foreign language learners is a constant concern among most EFL teachers. Learners may also be limited English proficiency (LEP) or reluctant due to other intrinsic or extrinsic motivational factors. You might be in need of new techniques for teaching English grammar, verbs or structure in context. Then too, EFL teachers may simply be seeking additional ways to incorporate dynamics into their English language teaching. For simulating settings try props like ashtrays, timers, an hourglass, bags in assorted sizes, a very dull razor, shave cream, an egg timer, spray bottles, and a free-standing clock. Likely you'll already have assorted books, paper, pens, rulers, scissors and other stationery items on hand in the class room to fill out this assortment of props.

Lights, Camera, Action!

Certainly, you won't need to have all of these items on hand. Whatever is available and suits the conditions under which you teach will drive which of these things you'll ultimately work with. Convection vs Conventional Ovens - What's the Difference?

If you are in the market for a new oven and you've already begun shopping for one, you've probably noticed that there are a few different types. Two of the most popular types are conventional and convection, and many newer ones have the option of cooking food in either fashion depending on the set mode. The difference in these two types is the way in which the heat in the oven is dispersed during the cooking process.

A convection oven uses a fan which is usually located on the back side. The purpose of the fan is to force the heated air inside and circulate it around the item being cooked. The heated air is constantly pushed over and around the food, and therefore a convection oven cooks food much faster than a conventional one.

The average amount of time saved when cooking with a convection oven is about 20 percent of the food's normal cooking time. Convection ovens are speedier and more efficient than conventional, and therefore may be more expensive. Conventional ovens are similar to convection ones in that they both cook food using heat. They both have the ability to use either gas or electricity, depending on the hook-up in a home. The most obvious difference between conventional and convection is the fact that in conventional, air is not forced throughout the oven on a constant basis with the aid of a fan, as it is in convection.

It is non-abrasive and is safe to use on brass, copper, stainless steel, fiberglass, porcelain, tile, plastics, glass cook tops, formica, and marble. So, in other words it is totally safe for your All Clad cookware sets, but I would not use it on non-stick surfaces like on the LTD or LTD2 lines. For non-stick surfaces I use the soft side of the sponge and mild liquid soap, as nothing should be sticking to it as it is non-stick! I would also recommend that you not use Bar Keepers Friend on the Cop-R-Chef line except for the inside of that line. Check your products documentation. Think of being a bare-essentials campfire cook, only take the minimum number of cookware pieces needed to get the job done. If a recipe calls for a skillet, maybe you can use the griddle, the Dutch oven pot or even the Dutch oven lid for small quick jobs Perhaps you can leave the heavy cast iron skillet home. The Dutch oven pot can also be used in place of pots and pans if you plan your campfire recipes to be casseroles or 1-pot campfire meals. You may be able to reduce your needs to one small pan that would fit inside the Dutch oven. Those extra pots and pans can stay home too.

Depending on your experience, you may not need to take a heavy cooking tripod or any campfire grills. You can lash together some sturdy tree limbs you find at the campsite for a tripod, and use cast iron griddles as campfire grills.

What about all those campfire cooking utensils? If you are a "cooking mechanic" and need dozens of specific campfire tools, that's your decision, but many experienced campfire cooks have discovered they only need: a good camping knife, a large serving spoon, and a spatula. And if you choose ones that have short handles they will pack inside the Dutch oven.

Now, review your choices and see what you have. The small pan, your leather camp gloves and the short-handled utensils should fit inside the cast iron Dutch oven. Now you have just the cast iron griddles and the Dutch oven to carry. (just pack your camping cast iron cookware, not the fancy enameled cast iron cookware you see in the kitchen)

And for cups, plates, and silverware, just tell your campers to bring their own coffee cups and eating utensils. Every thing else will be disposable paper stuff. This makes your job much easier with less to pack and haul in and out of camp.

If this is too minimalist for your menus of camp meals, or the campfire recipes, just make whatever adjustments are required, but still, only bring what you need. Keep these tips in mind when you put together your camping gear and campfire cookware and you will have a lot less to carry in and out of camp, leaving you more time to enjoy the outdoor camping activities you came for in the first place.

2 cups dry red wine 500ml

Procedure:

At first, you need to cut the green pepper into strips, discarding the stem, the seeds, and the membrane. Next, you peel and quarter the onion. Then chop the pepper and the onion finely in a food processor or food chopper. Be careful not to puree it. Following that, you add the garlic, the bay leaf, the marjoram, the one-half teaspoon (2ml) salt and the 2 tablespoon (30ml) olive oil. Blend the aforesaid ingredients well. Rub this mixture into both sides of the roast and let it stand for an hour.

Next, you scrape any of the green pepper mixture that is loose off the roast and save it. Then, you heat the 2 tablespoon (30ml) olive oil in a large heavy Rachael Ray saucepan or Dutch oven. Cook the meat well until it becomes browns on all sides. Then, you add the tomatoes, the green pepper mixture, the cinnamon, the cloves, the 2 teaspoon (10ml) salt, the pepper and the wine. Bring it to a boil, and then turn down the heat. Cover and simmer it 3 to 4 hours or until the meat becomes very tender, then turning the roast occasionally.

Afterward, you lift out the meat and place it onto a hot platter. Then, you add the cornstarch with cold water and stir it until it becomes smooth and blended. Next to that, you bring the liquid in the Rachael Ray pan to a boil and stir it in the cornstarch mixture gradually. Then, cook it until it is boiling and slightly thickened. Then, you taste it and add some salt and pepper if necessary. Serve it as gravy with sliced meat.
